By a mixture of geological peculiarity and climatic conditions, France is the largest producer of wine in the world. It has some of the hottest and coldest vineyards in the world and consequently, between the two extremes, an array of wine regions where particular grapes can find virtually perfect conditions to ripen. Its Apellation d’Origine Contrôlée (AOC) laws have formed the basis for demarcation systems elsewhere in Europe, North America and the southern hemisphere. Under French law, it is illegal to manufacture and sell a product under one of the AOC-controlled geographical indications if it does not comply with the criteria of the AOC.
