Climate Mild winters with little rainfall. Hot, dry summers characterised by substantial fluctuations between daytime and night time temperatures.
Soil Type Mainly clay terrain of medium consistency.
Vinification The merlot is harvested at the end of August and the nero d’avola in early September. They are vinified in stainless steel for 12 days of skin contact at 26-30°C.
Refining After malolactic fermentation the wine matures in second passage, French oak barriques for about one year and ages in the bottle for about 6 months.
Serving Temperature Excellent at 18°C.If served in large, big-bellied goblets, it can be uncorked at the time it is to be served; otherwise a couple of hours before serving.
Gastronomic Accompaniment This wine combines best with imposing dishes of roasted or braised red meats, game and cheeses.
